The ZF transmissions learn over time. Usually they will start off in 2nd gear.
It's likely that the previous owner liked taking off pretty quick, and so the transmission learned to start in first instead of second.
You could theoretically reset the transmission parameters, but it does matter how many miles are on the truck as a transmission reset is quite harsh on it. I wouldn't do it say past 85,000 miles.
But.. it may be worth it.
