Last week I got my car back from the dealership and had them do an oil change. This week I decided to check the engine oil the car was cold and had been sitting overnight when I checked the oil it read as overfilled. After a bit of driving, I checked it again and said it was ok (it was reading max). The next morning I decided to take the car to the dealer and have them take a look. The technician actually ended up adding a quart of oil!. He said my car has a heavyweight oil and the system uses a lot of oil to pressurize. The reading reads full (ok) when the engine is freshly run and warm. However, when sat overnight it reads overfilled still.

Should I be concerned?

My car is a 2011 with the digital oil display Fyi

Why not check it properly and see what the results are? The correct way to check the oil in 10-13 sports is run engine till at operating temps shut down and wait 10 minutes then check level on dash.

Checking the dash level at all these random times is going to give a different result each time. Follow manufacturers procedure.
